My Sibling Birthday

Hi baking fellas :)
Weeks ago, my sibling will celebrate her 23rd birthday. So my brother, her boyfriend, some friends and i planned to make a surprise party. i wanted to make her a birthday cake and i got an idea to make a cheese cake because she is a cheesy lover (not cheesy as a cheap things). Finally, i decided to make a dulce de leche cheesecake topped with salted caramel macaron. why macaron? hoho.. honestly, still trying to make a perfect macaron.

Okay, Lets start :D
First, i prepared the main cake base ingredients which is a digestive biscuits. Crush the digestive biscuits with rolling pin until it turned into crumbs.
*smash, smash, smash

finished crumbs

In other hand, melt the butter until it turned to liquid then pour to the crumbs. Fold it until it becomes dense and ready to use as a cake base.

move the dense crumbs into a 20cm springform pan then press into the bottom of pan. chill it at fridge for an hour.
the digestive cake base

while waiting for the chilled cake base, i started to make the dulce de leche which is a caramel creme. it was easy to make the dulce de leche, just combine caster sugar, palm sugar and cooking cream then heat it on pan until it turns to golden brown.

dulce de leche can be used both as a main flavor of cheese cake, also as a filling for salted caramel macaron.
the dulce de leche is ready to use

Next step is made the cheese cake. i beat the creme cheese, sugar, vanilla, and dissolved gelatin until they combined well. After that, i beat the cream until soft peaks then fold into the cheese mixture.
Pour the final cheese mixture into the cake base.

Before i chilled the cheese cake in fridge, i scattered amount of dulce de leche over the top using a spoon to make marble pattern. Umm.. seems i stirred too much but still okay. Finally, put it on the fridge for 3 hours or more until firm.
not so marble pattern :p

Next, it's time to made the salted caramel macaron. i'm not gonna show you the process because it's way too long. After the macaron is ready, i put 5 of them on the top of cheesecake.
caramel parade :9

For final touch, i put a chocolate stick to made it looked sophisticated. Here they are, Dulce De Leche Cheese Cake topped with Salted Caramel Macaron. Happy birthday sibling. :D

Pink Rose Macaron (3rd Attempt)

hi baking fellas :)
Long time no blogging because i'm busy preparing for my graduation. few weeks ago, i tried to make rose macaron again but with a different technique. Usually, i use the french meringue technique (uncooked sugar) to make the macaron shells. But then, i tried the italian meringue technique (cooked sugar) to make the macaron shells more shiny.
the ingredients

First of all, i made the sugar syrup. Just add the sugar with a small amount of water. Keep your eyes on it and do not stirring.
sugar syrup

Beat the egg whites until soft peak (meringue) then pour the sugar syrup into the meriunge in a thin stream. After done pouring the sugar syrup to the meringue, i realized that my batter is to runny because i did a wrong measurement of water in the sugar syrup. huff :(
runny batter :(

Okay, no time for disappointed. i directly tried to make the new batter but back to basic technique which is the french meringue technique. *still afraid to try the italian, maybe next attempt :p
my pretty undried macaron and Loewe

look at those awesome brittle foot *MeSoHappy

On the 2nd attempt, i filled my rose my macaron with a rose flavour white chocolate ganache. Although, i want to make a different creation of it so i tried to made rose butter creme.
Voila~, My petite rose macaron

fluffy filling :)

i made rose macaron so often cause basically i loved soft pink color and the taste of rose always delightful for me. Next time, i will try making the new flavor of macaron, melon maybe. See you on my next post, baking fellas. :)
Skippy waves good bye. *he accompanied me while i'm baking :D

My Baking Creations

just wanna show several of my baking creations :p

Japanese Cheese Cake
Japanese cheese cake was my very first time baking creation. unluckily, i forgot to capture  the slice of it. I love Japanese cheese cake because the cake is so fluffy moist unlike new york cheese cake which is more "heavy" moist.

Chocolate Lava Cake

Strawberries Rare Cheese Cake

Strawberries Rare Cheese Cake
I made these strawberries cheese cake for celebrated my birthday boyfriend on January'12. It was a very easy to made cause it's unbaked.
It's sweet sour cheese cake combine with digestives crumbs for cake base. Sour taste comes from strawberries which also give a natural pink color for the cake. nom nom~

Salted Caramel Macaron
My first attempt created macaron. there's some failure from its shells, first one is i baked it too long so the yellow color turned to golden brown. it makes my macaron shells look like a whoopie.
second one, i mixed the batter too long until it became runny, so just a tiny foot came out from the macaron. Otherwise, the salted caramel filling was taste like heaven.

Pink Rose Macaron
Second attempt and it was perfectly baked. i made the filling from white chocolate ganache with adding a small amount of rose flavor. Voila~

Peanut Butter Cupcakes with Caramel Toffee
i made those cupcake for my university mates to celebrate our successful final thesis defense . The texture of those cupcake is similar like brownies. the sweet caramel toffee balanced the salty taste of peanut butter spread and peanut butter cake.
